Four Thieves Vinegar

Vinaigre des 4 Voleurs (Four Thieves Vinegar) is an historic recipe first crafted to protect against plagues. The preparation likely dates back to the medieval period. It is said that it was first used to combat the Black Death.

Vinegar or wines infused with herbs were employed against disease going back into antiquity. Similar preparations were used during the time of Hippocrates. Apple cider vinegar is noted for its antimicrobial properties. This recipe is edible and mixed with virgin olive oil makes a very nice vinaigrette.

According to the mythology, the name derives from four thieves who would steal from the dead. Once apprehended they traded the recipe for the concoction that kept them safe from contracting disease in exchange for leniency. The incident is said to have occurred in Marseilles or Toulouse and the formula is also known as Marseilles Vinegar.

  • 1 Tbsp. dried sage leaf
  • 1 tsp. dried lavender flowers
  • 1 tsp. dried rosemary leaf
  • 1/2 tsp. dried thyme leaf
  • 1/2 tsp. black peppercorns
  • 16 oz. raw organic apple cider vinegar
  • 1 pint jar

Place all the dry herbs in the pint jar. Pour vinegar over the herbs until the jar is full.

Place in a cool dry and dark location for few weeks. Shake every couple of days to stir up the herbs.

To make a simple vinaigrette whisk were a good virgin olive oil. Ratios may vary by taste but I usually do 3 parts oil to 1 part vinegar.

Vinaigrette variation

1/2 cup Olive Oil

3 Tbsp Vinegar

2 Cloves garlic

Dijon Mustard to taste

Pink of sea salt

Blend in a food processor or finely chop the garlic and whisk briskly until emulsified.
